Our top Cabernet Merlot blend is named after a famous ancestor of the Weiss family, who own Elephant Hill, Hieronymus Ebner von Eschenbach, Lord Mayor of Nuremberg 1512-1524.
2018 Hieronymus is composed of 58% of Cabernet Sauvignon, 22% Merlot, 19% Cabernet Franc and 1% Malbec from our vineyard at the heart of Gimblett Gravels Growing District. There were ten different hand picks from late March to mid-April. All the fruit was hand sorted in the vineyard then sorted again in the winery with our optical machine. All varieties were fermented separately in a selection of Bordeaux Cooperages then drained to barrel without pressing. The wine spent 22 months in French barrels (70% new) and additional 1 month in tank. It was bottled with minimal filtration and no fining on 24th March 2020.
Tasting Note: Bold, dense red wine with concentration and power. It has layers of berry, dried fruits, spice, cedar and subtle floral notes. Dry, complex, full-bodied with rich flavours and textures. It is a wine that will keep improving over the next 10+ years.
