The Icon range is the pinnacle of our winemaking. They are fine and rare wines made in strictly limited quantities.

Our top Cabernet Merlot blend is named after a famous ancestor of the Weiss family, who own Elephant Hill, Hieronymus Ebner von Eschenbach, Lord Mayor of Nuremberg 1512-1524.

2019 Hieronymus is composed of 60% Cabernet Sauvignon, 29% Cabernet Franc and 11% merlot from the heart of Gimblett Gravels Growing District, our STONE vineyard. There were different hand picks through late March and early April. All the fruit was hand sorted in the vineyard then sorted again in the winery with our optical machine. All varieties were fermented separately in a selection of Bordeaux Cooperages then drained to barrel without pressing. The wine spent 24 months in French barrels (67% new) and additional 4 months in tank.

Tasting Notes: Bold, dark, purple-flushed colour and a fragrant, spicy bouquet. Mouthfilling, it is finely textured, with notably concentrated, vibrant blackcurrant, plum and spice flavours, showing excellent ripeness and complexity with fine, supple tannins.
